Homestyle Coleslaw
I love a good coleslaw and one of my favorite restaurants, Hillstone [also known as Houston's] has a really delicious one, so when I found this copy-cat recipe to make theirs I was pretty excited. I think it makes the perfect side dish for a BBQ this summer. This weekend we made pulled-pork sandwiches on hawaiian sweet rolls with this coleslaw on top and they were amazing. | INGREDIENTS |
5 cups chopped cabbage about 1/4" x 1/4" [not shredded]
1 cup chopped parsley tops [medium - small pieces should not be larger than the cabbage pieces]
1/4 cup chopped green onion tops [use just the tops]
1/4 teaspoon salt
1/4 cup mayonnaise
1/2 cup sour cream
1 tablespoon honey mustard
1 1/2 teaspoon white vinegar
1/4 teaspoon salt
1/2 teaspoon sugar
[if you don't have a lot of time, you can also use the pre-chopped coleslaw mixes from the grocery store. I also like to add shredded carrots to this recipe]

Blend and stir the first three ingredients then add salt and stir well, set aside. In a separate bowl, mix all remaining ingredients very well and pour over cabbage mixture. Fold in dressing so all is coated. May be served immediately or will keep in refrigerator for the next day.
