BLT Chop Salad with Corn, Feta & Avocado
| INGREDIENTS |
one head of romaine lettuce
1 tomato, chopped
1 cup sweet yellow corn
1 avocado, chopped
4 slices of thick-cut bacon, fried and crumbled
4 ounces feta, crumbled
| DIRECTIONS |
Lay your lettuce on a big cutting board and chop it all up in small pieces then place in a large serving bowl. Add the chopped tomatoes, avocado, and corn. Pour the cilantro lime vinaigrette dressing over the top and toss well to coat. Sprinkle with feta and bacon on top then serve immediately. Enjoy!!
| CILANTRO LIME VINAIGRETTE DRESSING |
1 cup loosely packed cilantro, stems removed and roughly chopped
1/2 cup plain Greek yogurt
2 tablespoons fresh lime juice [about 1/2 lime]
1-2 garlic cloves
1/4 cup olive oil
1 1/2 teaspoons white vinegar
1/8 teaspoon salt
Puree all ingredients in a blender or food processor until smooth. Taste and adjust seasonings if necessary.
