Cheese and Mushroom Salad
I love a good salad and yesterday I was craving something healthy and filling so I put together this one with the ingredients that I had on hand, and I think it turned out really delicious! If I would have had some spinach than I probably would have used that instead, and I also think it'd be great with shredded chicken on top. So you can play around with the ingredients a little. Try this out for dinner one day this week and let me know what you think!
| INGREDIENTS |
1 head romaine lettuce, chopped [spinach would also be good]
1/2 red onion, sliced
1 1/2 c. mushrooms, sliced
1/2 c. fresh parmesan cheese grated [swiss cheese would also be good]
1/2 c. dried cranberries
3/4 c. cottage cheese, drained
1/2 c. toasted slivered almonds
In a large serving bowl, toss together lettuce, onion, and mushrooms. The garnish the top with cheese, craisins, and almonds. Just before serving fold in drained cottage cheese and dressing.
| VINAIGRETTE DRESSING |
2 Tbsp. sugar [or other artificial sweetener, I use Splenda]
2 tsp. dried mustard
2/3 c. apple cider vinegar
1 c. vegetable oil
1 tsp. kosher salt
1 tsp. coarse black pepper
Combine dressing ingredients in blender and store in refrigerator. Toss all other salad ingredients together in bowl and then top with dressing. Serve and enjoy!
