BELLA Automatic Spiralizer Giveaway
Hey guys! If you've been following me on my instastories then you know how much I've been loving trying out new recipes using our spiralizer. We've had one for awhile that you have to spin yourself with a handle so it was always such a hassle to get out, but since getting this new BELLA Automatic Spiralizer - I've been using it all the time! I love how it has four different settings to get spaghetti, ribbons, linguini, or fettucini noodles with your veggies so the options are endless. The assembly is so quick and with just the click of a switch you have spirals for your meal in seconds. It's such an easy way to get more veggies into your day and all of the dishes I've tried out lately have been amazing that I can't wait to share this delicious salad with you today. Summertime always makes me think of fresh veggies from the garden and light salads that can be tossed in a little olive oil or balsamic and be ready to go. This recipe is a take on a Caprese salad that will have you dreaming you're on the coast of Italy. Hope you love it as much as me!

CAPRESE ZUCCHINI SALAD
20 min prep time Makes 2-3 servings
Balsamic vinegar and lemon juice transform the raw spiralized zucchini ribbons into silky smooth bites and they just get better the longer it marinates.
| INGREDIENTS |
2 Medium Zucchini [spiralized to look like ribbons and trimmed into 5 inch pieces or less]
1 cup Cherry tomatoes, halved
For the Marinade:
1 tablespoon Lemon Juice
3 tablespoons Balsamic Vinegar
2 tablespoons Olive Oil
1 Medium Garlic Clove, minced
Kosher Salt and freshly ground Black Pepper
12 small Mozzarella Balls, halved
1/2 cup thinly sliced Basil Leaves
| INSTRUCTIONS |
Place the zucchini and tomatoes in a large bowl.
Make the marinade. Pulse the ingredients in a food processor until the garlic in smooth.
Pour the marinade over the zucchini noodles and tomatoes, and toss to combine. Place in the refrigerator to marinate for at least 10 minutes.
Add the mozzarella and basil to the zucchini noodles, toss to combine, and serve.
