Have you noticed how toast has become really trendy lately? And not just any toast, gourmet avocado toast is a hot thing right now and I think it's because of a couple restaurants in LA making it big. I have always loved bruschetta so I thought this would be a great thing to try and make my own version with avocado on it. This seriously turned out so delicious and would make the perfect appetizer for a dinner or party. I think the balsamic reduction adds the best finishing touch, but you could also make it without.

1 french baguette, sliced into 1/2 inch slices
1 avocado
onion powder, garlic powder, and salt to taste
1 tomato, chopped
1/4 red onion, finely chopped
1 tablespoon fresh parsley
1 tablespoon olive oil
freshly grated parmesan cheese
balsamic reduction

Place bread slices on a baking sheet and brush some melted butter on top. Put in the oven to broil until the edges are golden brown. Let the toast cool.
While the bread is toasting, mash the avocado then add some salt, onion powder, and garlic powder to season. Mix well and set aside.
In a separate bowl, mix tomatoes, red onion, parsley, salt and olive oil. Then assemble the bruschetta by first spreading the guacamole on the bread and then add a spoonful of the tomato mixture. Sprinkle with parmasan cheese on top and then drizzle with balsamic reduction. Bon Appetit!
