With Easter coming up, I wanted to share a recipe this week that would be the perfect thing to make this weekend while you have lots of eggs around from decorating for the holiday. One of my favorite things to make with hard-boiled eggs is deviled eggs. I'm not sure why, but I just love them and I think they are a crowd pleaser at any gathering. I hope you'll enjoy this recipe as much as we do and don't be afraid to spice them up.
| INGREDIENTS |
6 large eggs, hard boiled and peeled
1/3 cup mayonnaise
1 tablespoon mustard [i like to use dijon]
1 teaspoon white vinegar
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1/4 cup feta cheese
salt to taste
paprika sprinkled on top
parsley sprinkled on top

Cut each egg in half lengthwise and remove yolks into a bowl. Mash the yolks well and blend with mayo, mustard, vinegar, garlic powder, onion powder, and salt. Add feta cheese and blend with a hand mixer to get an even consistency. Fill egg whites with yolk mixture using a spoon, a pastry bag or a plastic bag with the corner snipped off. Sprinkle with paprika and parsley on top, if desired and refrigerate them, covered, until serving time. Enjoy!
